We've had our first crack at salami making.  Now all we've got to do is wait....

Wow - they look fantastic!  Keep us posted - better still, how about distributing samples to all forum members when they mature?  How would that be for a recruitment drive??

You may notice that we are using the porch at the backdoor.  It's not problem as we mainly use the front door anyway.  We had a minor accident when I let the dog out at 2am the other night.  He knocked the backdoor onto the pole and I ended up with 3kg of stinking salami wrapped around my head!  We've secured the pole a little better since then!

It could have been far more tragic than that - the salami might have been wrapped around the dog . . .  but probably not for long.

Could you tell me how long it takes for those to 'mature' ready for eating ?

They look GREAT !

Where did you get the recipe if you don't mind me asking ?

Regards.  Cool

They didn't take long at all 4-6 weeks and then froze really well!  So tasty.

Excellent. Where was the recipe from, I've seen loads in google but might as well try one that someone's actually tested !
